You will first need to roast off your sweet potato. For this recipe I like to dice them up and toss them in oil and spices before they hit the oven. This will add a nice caramelization and spice to the sweet potatoes and a great depth of flavor to the finished dish. Once they are roasted off, mash them up a bit. It's ok if they are a bit lumpy!
Next you will build your quesadillas. Once they are on the griddle, the sweet potato along with melted cheese will hold the quesadillas together. If you don't have a griddle, that's ok! You can use a large skillet or sauté pan. Just make sure to adjust the heat as now there is more surface area. Serve with whatever toppings you like and enjoy!
